RICE, RICE FIELDS, RISOTTOS:
Agriculture still plays a prominent role in Piedmont, the most western Italian region.
Rice is the main feature: high quality rice, excellent for making “risotto” is produced in the Vercelli area.

In such area more than 100 categories of rice are produced: the most traditional species of rice are protected by special Quality Brands.
Baldo: excellent quality and suitable for a wide range of gastronomic possibilities.
Arborio: historically renowned rice, it is highly appreciated and the most widely used in Italy.
Sant'Andrea: grown in the Baraggia area, it features large and rounded grains and a compact structure.
Nuovo Maratelli: production was discontinued for many years but this kind of rice is now grown again. It’s one of the species that marked rice growing history.

In the Vercelli area, can enjoy rice dishes, among those the local specialty Panissa, a rice dish with lard and “salam d’la duja” (a seasoned sausage) and Saluggia beans as well as frog dishes.

The whole area features distinctive specialties of Piedmont cuisine: salami, fritto misto (mixed fried food), bollito (boiled meat), bagna cauda and more.
